ABOUT: Rosine's Restaurant first opened in 1980 when Rosine Culcasi, her, husband and their four children decided to open up a restaurant in the Del Monte Shopping Center located in Monterey, California. The restaurant was an instant success and each family member soon had his/her work cut out for them ? half of the family in the kitchen doing the cooking, baking, ordering and delegating, while the other half did the serving, greeting and hiring. Rosine's quickly established reputation was supported by many satisfied customers who liked the consistency, quantity and quality. Delicious homemade soups and a hearty daily lunch specials always attracted a handsome crowd, as did homemade fresh fruit pies and fresh custards. It often seemed that the customers seldom let the pies or custards cool even slightly before savoring them with vanilla ice cream or whipped cream. Friday nights at Rosine's were known as "Family Nights," mainly due to the generous portions, although the comradely air added to the attraction. More than half of the customers were either related or very good friends, which meant it didn't take long before the waitresses could address their customers by first names. The busy Friday nights were a perfect example of what the Culcasi Family had in store for their bright future. After five years, the family decided to expand their horizons and meet a new challenge. they relocated to a much larger space occupied by an existing restaurant in the central downtown area. From what was once a dark dining area completely done in wood, emerged an airy, soothing atmosphere with French doors hugging the sidewalk to being the outdoors inside.
