Mammoth Sandwich Island Salsify (Tragopogon porrifolius), also known as Vegetable Oyster or Goatsbeard, is a relative of the parsnip. Salsify was very popular in the Victorian era, but dropped off in popularity over the past century or so. To the contrary though, the root is still considered a delicacy by many and can easily be grown from seed. This biennial root is best known for the subtle similarities to the taste of an oyster.
