WORLDWIDE SHIPPING (EXCEPT WHERE PROHIBITED) Kai Cutlery Japanese kitchen knife. Seki Mago Roku cutlery made in Seki City. Santoku kitchen/ chef/ utility knife. All purpose blade style made of high carbon stainless steel. 7 1/4 inch blade. 18 cm cutting edge. The blade is convex ground on both sides and suitable for right or left hand use. Blade has 3 layer laminated construction with the cutting edge made of very hard high carbon stainless steel sandwiched between 2 outer layers of softer stainless steel. The outer layers of stainless steel make the blade stronger and less brittle while allowing the inner layer to have the high hardness needed to keep a sharp edge. The wavy line near the edge is where the two different types of steel are laminated together. To make the knife stronger and more durable, the blade has full length tang and handle is triple riveted in place. The handle material is a specially processed laminated wood that has the strength and durability of hard plastic but retains the grain patterns of natural wood. A stainless steel bolster reinforces the area between blade and handle. The blade is finely ground to a thin edge for easy slicing. It should not be used to cut bones or hard objects.
