A fruiting evergreen native to the Mediterranean and hardy down to zone 8. Also called St. John's Bread. The naturally sweet Carob pulp is a third to half sugar and can be roasted then ground as a chocolate substitute. In Malta, they make a delicious Syrup and caramel-like candy from it. Various liquors are also made from it. Contains vitamin A, B, D vitamins, phosphorus, potassium, magnesium, calcium, iron, zinc, manganese, copper and is rich in polyphenols, glutamic acid and arginine. Rich in fiber as it helps prevent constipation. Growing tip: Pour warm water on seeds and oak for 24 hours before planting inside seed starter mix. Scientific name: Ceratonia siliqua
