Description:
Borage is a versatile, eye-catching herb that reaches 2-3 feet in height and attracts bees and beneficial insects, making it an excellent choice for pollinator gardens and cover crops. Its star-shaped, edible flowers, typically blue but sometimes pink, add a refreshing cucumber-like flavor to salads, dips, and drinks, or can be candied for a sweet garnish. The leaves and stems are edible too, with a flavor that’s delightful when steamed, similar to spinach or chard. Once established, borage is fairly drought-tolerant and known for its liberal self-sowing, ensuring a continued presence in your garden year after year.
Planting Instructions:
Direct sow seeds outdoors after the last frost, planting 1/2 inch deep and spacing them 6 inches apart in full sun. Borage thrives in fine, well-worked soil and germinates in 10-14 days. Once seedlings are well-established, thin them to 12-18 inches apart to allow the plants room to mature. Borage can grow in poor soils, is tolerant of drought once established, and does not transplant well due to its long, delicate taproot. As a prolific self-sower, borage will naturally re-seed in the garden, bringing more blooms each season.
