A high protein microgreen with beautiful foliage, fuschsia-red flower plumes, and stunning color. Delicately flavored sprouts can be used as a garnish for salads or oriental dishes.
Amaranth had a sacred status among ancient civilizations such as the Aztecs and Incas. The grain being used in various rituals. In modern Mexico it remains a staple food being prepared in numerous dishes from sweet to savory.
A traditional Mexican food "Alegria" is made from Amaranth and honey or molasses.
Serves as a "super grain" for gluten-free flower. Also makes a complete protein when mixed with another grain. Additionally, amaranth greens has the highest iron content out of all greens except for parsley, as well as containing many valuable vitamins and minerals.
