This listing consists of 6 Zwilling J.A. Henckels Vier Sterne (Four Star) knives, a non-Henckels honing steel, and an Adams, Dorset Vermont wood knife holder . The knives are as follows: 10-inch Hollow Edge slicing Knife, 6-inch Chef Knife, 7-inch Filleting Knife, 5 1/2-inch Flexible Boning Knife, 5-inch Utility Knife, Serrated Edge, and 4-inch Paring Knife. All of the knives are marked Zwilling J.A. Henckels Solingen Germany No Stain Friodur, and the Zwilling (Twins) mark. Each knife has a model number and length marked on the knife. Henckels began producing knives in Solingen, Germany, "the city of blades" in1731. The knives are of high carbon steel, are fully forged, are full tang, are ice-hardened , with ergonomic molded polypropylene handles. According to J.A. Henckels site, the ice hardening makes for an exceptional edge retention, corrosion resistance, and flexibility. Ice-hardening consists of cryogenic tempering by immersing the blade in liquid nitrogen. V-edge knives have an ideal cutting angle of 30 degrees. The handle is designed to be balanced. J.K. Adams of Dorset Vermont makes fine wood products since 1944 crafting high-quality kitchen and homewares from sustainable North American hardwoods. The knife holder has 12 knife slots and a honing steel slot. It is designed to lie flat in a drawer. The honing steel portion of the steel is approximately 10 inches long and the handle is approximately 5 inches. There is a steel hanging ring on the end and a protective flair or flange between the handle and the steel. According to the Henckels website, if purchased individually now, these 6 knives would cost approximately $560.00. I have used most of the knives occasionally. Some not at all. They seem sharp to me but may need a light resharpening. The boning knife has a couple of small nicks near the tip. The chef knife handle has a scratch. The wood knife holder is raw wood, no stain or coating. There is a small area of peeling on the top and some "dings" on one side. I retired years ago and when I retired I purchased lots of kitchen gadgets and fine culinary tools. I thought I would hone my cooking skills. It turned out that the last thing I wanted to do was cook. I am now downsizing and am selling most everything. Non-smoking household.
